Vegetarian bolognese

A vegetarian variant of spaghetti bolognese made on lentils, carrots, tomatoes and delicious spices.

Lentils do not contain any cholesterol or harmful fat. Therefore, they are perfect for the heart and arteries.

Vegetarian bolognese

  • 3 carrots
  • 1 yellow onion
  • 2 garlic cloves
  • 400 ml crushed tomatoes
  • 1 teaspoon sambal oelek
  • 3 dl red lenses
  • 1 tablespoon dried oregano
  • 1 tablespoon of dried basil
  • 1 teaspoon dijon mustard
  • 5 dl of water
  • salt and pepper
  • Pasta for 4 people (we used bean paste)


  1. Divide the carrots into pieces
  2. Chop the yellow onion as well as the garlic
  3. Fry the onions in butter or oil
  4. Add the spices, sambal oelek, dijon mustard, carrots and the crushed tomatoes
  5. Let it simmer for 5 minutes
  6. Add 5 dl of water and the lentils, allow to boil until the lenses are ready (10 min)
  7. Cook the pasta as instructed on the package
  8. Serve
