Poor man’s luxury, That is how i would like to describe the French onion soup, just because onions and a few slices of dry bread may not sound like much, but together they are wonderful. In this recipe i have turned the soup it into a casserole! If you want, you can cook this casserole in two steps, fry the onion the night before and do the rest the next day, in this way 90 minutes all of a sudden reduced to 30 minuts . Hocus Pocus!

Ingredienser

  • 20 grams of butter
  • 5 large yellow onions
  • 7 dl water
  • 1 vegetable broth dice
  • 2 bay leaves
  • 3 sprigs of thyme
  • 1 dl wheat flour
  • 1/2 baguette
  • 3 dl grated cheese
  • Black pepper and salt

GÖR SÅ HÄR

  1. Melt 20 grams of butter in a thick-bottomed saucepan
  2. Slice the onion and place in the saucepan together with the thyme, bay leaves, black pepper and salt
  3. Let fry on low to medium heat for 60 min
  4. Meanwhile, slice thin slices of baguette and toast in the oven at 225 degrees celsius for 3 min (when the breads are ready lower the heat in the oven to 175 degrees)
  5. When the onion starts to get color, remove the thyme and bay leaves, add 7 dl water and a vegetable broth, cook until the vegetable broth is dissolved
  6. Sift in the flour and cook for 4 minutes, stirring constantly
  7. Add half of the toasted bread to the bottom of an ovenproof dish (21 x 22 cm ), pour over the onion mixture, top with the remaining bread and cheese and bake in the oven at 175 degrees for 30 minutes (use foil).
  8. Serve with a delicious salad
