Here is a wonderful cake recipe for all the wonderful summer days ahead

Strawberry & Rhubarb cake

  • 6 eggs
  • 3.5 dl sugar
  • 4 tsp baking powder
  • 1.6 dl potato flour
  • 1.5 dl wheat flour
  • 300 grams of rhubarb
  • 5 dl cream
  • 1 teaspoon vanilla sugar
  • 200 grams of strawberries


  1. Preheat oven to 190 degrees Celsius  and prepare 2 cake pans (20 centimeters in diameter)
  2. Heat the eggs and 2.5 dl sugar in a saucepan until the sugar crystals begin to melt (about 60 degrees)
  3. Whisk the eggs with electric whisk for 20 minutes
  4. Carefully add  wheat flour, 1.5 dl potato flour and baking powder
  5. Divide among cake pans and bake for 20 minuts
  6. Let the cake cool

Rhubarb compote

  1. Tend and cut the rhubarb into small pieces and place in a saucepan together with 1 dl sugar and 1 teaspoon vanilla sugar
  2. Simmer until the rhubarb has become soft, then add 1 tablespoon potato flour and cook for a few more minutes
  3. Let cool
  4. Whisk 5 dl of cream and stir down the cold rhubarb compote

Now it´s time to build your summer cake  

  1. Divide the cake bottoms and add rhubarb filling as well as strawberries between each layer and on top, decorate with lots of strawberries.
