Ingredienser

  • 2 tablespoons olive oil
  • • 2 cloves garlic
  • • 1 yellow onion
  • • 2 carrots
  • • 1/2 stalk of celery
  • • 1 tablespoon tomato puree
  • • 1 dl white wine
  • • 4oo grams of finely crushed tomatoes
  • • 1 dl water
  • • 1 bay leaf
  • • 1/2 pot basil
  • • Salt, pepper, sugar
  • • 1 tablespoon butter
  • • 400 grams of Halloumi
  • • 250 grams of pasta Tortiglioni
  • • Parmesan

1. Finely chop garlic, onion, carrots and celery

2. Heat 2 tablespoons olive oil in a frying pan and add the garlic, sauté briefly

3. Add onions, carrots, celery and tomato puree and sauté until they get a little color

4. Add wine, crushed tomatoes, water, salt, pepper, bay leaves and finely chopped basil  (save a few leaves for serving) and simmer under a lid for 30 minutes (taste with sugar)

5. While the bolognese is simmering, divide the haloumin into smaller pieces and fry with butter in a frying pan until they get colored 6

. Pour the fried halloumi into the bolognese

7. Boil the pasta according to the instructions on the package

Serve the pasta with halloumi bolognese, parmesan and fresh basil
