A vegetarian bolognese with balanced flavors. A pasta dish that is suitable both as a lunch, dinner or more festive occasions. Serve with a good parmesan and fresh basil
1. Finely chop garlic, onion, carrots and celery 2. Heat 2 tablespoons olive oil in a frying pan and add the garlic, sauté briefly 3. Add onions, carrots, celery and tomato puree and sauté until they get a little color 4. Add wine, crushed tomatoes, water, salt, pepper, bay leaves and finely chopped basil (save a few leaves for serving) and simmer under a lid for 30 minutes (taste with sugar) 5. While the bolognese is simmering, divide the haloumin into smaller pieces and fry with butter in a frying pan until they get colored 6 . Pour the fried halloumi into the bolognese 7.
