  • 3 dl flour
  • 3 tablespoons cold water
  • 125 g butter
  • 300 grams of fresh asparagus, save some for topping
  • One click of butter
  • 1 lemon
  • 2 dl crème fraiche
  • 3 eggs
  • 1 garlic clove
  • 150 grams of parmesan
  • black pepper and salt


  1. Preheat the oven to 200 degrees
  2. Mix butter, flour .
  3. Add water and mix into a dough.
  4. Leave the dough to cool in the refrigerator for a while before rolling it out.
  5. Bake the pie shell for 10 minutes
  6. Slice the asparagus
  7. Heat a lightly buttered  frying pan over medium high heat, add  asparagus and a  sliced garlic clove
  8. Grate the parmesan cheese.
  9. Whisk  eggs, crème fraiche, parmesan cheese, salt and pepper in a bowl and add the fried asparagus
  10. Pour the  batter into a pie shell  and decorate with fresh asparagus as well as a few lemon slices
  11. Bake  at 200 degrees 15 minutes
  12. Serve with a fresh salad
