I love food that you can easily can choose if you want to eat at the dinner table or grab in your hand to go for a walk or simply just pack in the picnic basket. Hot pockets can be made in a thousand different ways, with a thousand different fillings. In this recipe, I have chosen to fill them with feta cheese, tapenade and honey.

  • 50 grams of yeast
  • 150 grams of butter
  • 1 teaspoon salt
  • 2 teaspoons honey
  • 5 dl milk
  • 13 dl wheat flour
  • Filling:
  • 400 grams of feta cheese
  • 130 grams of green tapenade
  • 1 dl creme fraiche
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • Topping:
  • 2 beaten eggs
  • Sesame seeds topping
  • A bunch of spring onions
  • Honey to drizzle over the hot pockets


  1. Crumble the yeast in a bowl together with salt and honey
  2. Melt the butter and mix with 3 dl of the milk (so that the butter is 37 degrees Celsius) pour the butter into the yeast and stir until the yeast dissolves.
  3. Add the remaining milk and the wheat flour, save 2 dl of the wheat flour
  4. Knead the dough and then leave to rise for 40 minutes for baking 
  5. Set the oven to 225 degrees Celsius 
  6. Mix together the feta cheese, tapenade, creme fraiche and honey to a creamy mixture
  7. When the dough has finished fermenting, knead it for a few minutes on a floured baking sheet.
  8. Divide the dough into 25 parts. Roll one piece at a time into a round bun and roll it out and fill with 1 tbsp filling
  9. Fold the hot pockets and close it by pushing a fork around the edges
  10. Brush with egg and sprinkle with sesame seeds
  11. Bake for 12 min
  12. Serve with chopped  spring onions, honey and some extra creme fraiche
