Ingredienser

  • 400 grams of Paccheri pasta (pasta tube)
  • TOMATO SAUCE:
  • 1 yellow onion
  • 2 cloves garlic
  • 2 tablespoons tomato puree
  • 1 teaspoon balsamic vinegar
  • 400 grams of crushed tomatoes
  • 1 tablespoon honey
  • 1 tablespoon chopped oregano
  • 1 tbsp olive oil
  • Black pepper and salt
  • RICOTTE CREAM:
  • 2 shallots
  • 2 cloves garlic
  • 70 grams of fresh spinach
  • 500 grams of ricotta
  • 2 teaspoons Dijon mustard
  • 1 Tbsp oliv oil
  • Chili flakes, black pepper & salt
  • BECHAMEL SAUCE:
  • 2 tablespoons butter
  • 2 tablespoons wheat flour
  • 5 dl milk Salt and pepper
  • TOPPING:
  • 1 dl grated parmesan

  1. Pre heat the oven to 200 degrees
  2. Peel and chop the onion and garlic
  3. Fry the onion in a frying pan with 1 tablespoon oil, add tomato puree, crushed tomatoes, balsamic vinegar, honey, spices and salt.
  4. Let boil for 5 min
  5. Now it's time to make the ricotta cream
  6. Fry the shallots and garlic with 1 tablesppon of oil in a frying pan, add the spinach, sauté for 2 minutes
  7. Mix the spinach and onion with 500 grams of ricotta,  add Dijon mustard, chili flakes, black pepper and salt
  8. Now it's time to make the béchamel sauce
  9. Fry butter and flour in a saucepan and add the milk, stirring constantly until the sauce thickens, add black pepper and salt.
  10. Grease a mold with loose edges (18 cm) Pour on layer of tomato sauce in the bottom of the baking pan (half of the tomato sauce) arrange the pasta tubes
  11. Sprinkle the ricotta cream into the pasta tubes, pour on the remaining tomato sauce and then the béchamel sauce. top with parmesan
  12. Set in the oven for 20 - 30 min (cover the mold with oven foil or lid for the first 15 min)
