Autumn is soon here and we can now enjoy lots of delicious fruits and vegetables. Why not make this incredible tasty atumn salad that we have topped with pangratton, golden bread crumbs with a little garlic.

  • 1 sweet potato
  • 2 polka beets
  • 2 red apples
  • 2 dl chopped red cabbage
  • 2 dl chopped kale
  • 200 grams of mozzarella
  • 1 clove of garlic
  • 2 tablespoons olive oil
  • 1 tablespoon neutral oil
  • 2 slices of bread
  • 1 dl pumpkin seeds
  • Salt
  • Vinaigrette
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 3 tablespoons olive oil
  • Salt & black pepper


  1. Pre heat  the oven to 200 degrees
  2. Peel and cut the sweet potatoes and polka beets into larger pieces, drizzle over olive oil, salt. Roast in the oven for 30 minutes
  3. While the root vegetables are in the oven  you can make pangrattato -mix 2 slices of bread in a blender to crumbs and fry them with oil in a frying pan until the bread crumbs are golden, then add  garlic.
  4. Mix all the ingredients for the vinaigrette
  5. Chop the red cabbage and kale and mix with the vinaigrette
  6. When the root vegetables are ready, mix them with the cabbage
  7. Slice apples and add to the salad together with pumpkin seeds
  8. Top with mozarella and pangrattato
