Ingredienser

  • 1 kg potato pancake mix (available for purchase in store)
  • 200 grams of spinach
  • 2 yellow onions
  • 2 garlic cloves
  • 12 small tomatoes
  • 2 dl grated cheese
  • chipotle gravy
  • Butter to frying
  • Salt and pepper

  1. Chop the onion and slice the tomatoes
  2. Fry the onions in 2 tablespoons of butter
  3. Add the spinach and tomatoes, salt peppers  (medium heat for about 5 minutes)
  4. Add 2 tablespoons of butter in a frying pan
  5. Add the potato pancake mix (make 4 omelet)
  6. Fry to a fine color (on both sides)
  7. Put the spinachmix and cheese on the half omelet, then fold over the other half of the omelet
  8. Sprinkle with chipotle sauce / dressing
