The classic Italian cream cheese mascarpone is excellent to eat with pasta. In this recipe, the mascarpone has been cooked together with white wine and parmesan, a fantastically luxurious lunch or a delicious Friday evening dish together with a glass of wine

  • Spaghetti for 4 servings
  • 1 dl white wine
  • 250 grams of mascarpone
  • 1/4 carrot
  • 3 cherry tomatoes
  • 2 cloves garlic
  • 1 lemon
  • 2 dl grated parmesan + some extra for topping
  • Finely chopped parsley
  • Salt & black pepper


  1. Fill a large saucepan with water, when the water starts to boil  add  salt and spagehtti
  2. Cook the spaghetti 1 minute shorter than the instruction on the package
  3. Finely chop the garlic, carrot and tomatoes
  4. Bring out a frying pan and add wine and then add the carrot, tomatoes, garlic and zest from the lemon, simmer for a few minutes
  5. Then add mascarpone, parmesan, salt, black peppar and simmer until the pasta is done.
  6. When the pasta is done, add 1 dl pasta water to the mascarpone sauce and then the pasta, finely chopped parsley (taste with salt and black pepper)
  7. Serve with grated parmesan
