  • 2 ripe mango
  • 3 tbs butter
  • 2 tbs muscovado sugar
  • 1 vanilla bean
  • 2 tbs rum


  1. Peel the mango an cut gently it in two halves.
  2. Remove the mango hask/seed with a spoon and some patience
  3. Notch a beautiful checkered pattern on the halves
  4. Melt 2 tbs butter in a frying pan and place the halves with the checkered pattern down.
  5. Fry until they have a beautiful surface, then turn the mangoes over and fry for a few more minutes, then lift them over on a plate and set them aside
  6. Divide the vanilla bean and scrape out the seeds, stir the seeds into the frying pan together with 1 tablespoon butter, muscovado sugar, and rum, let it boil for a couple of minutes (also put the whole vanilla bean in the sauce)
  7. Place the mango halves on plates, pour on the sauce, serve with vanilla ice cream
