Carrot pie filled with delicious cheese and thyme will be an appreciated dish on the dinner table.

INGREDIENTS​​

  • 4, 5 dl flour mix (Gluten free from finax)
  • 4 tablespoons of water
  • 150 grams of butter
  • 0.5 teaspoon salt
  • 3 carrots
  • 1 yellow onion
  • 3 eggs
  • 4 dl milk
  • 2 dl strong cheese
  • 2 tablespoons dried thyme
  • 3 dl cream fraiche
  • 1 red onion
  • 2 teaspoons honey
  • salt and pepper

INSTRUCTIONS​​

  1. Set the oven to 225 degrees

Pie

  1. Mix the flour mix with 150 grams of butter, 0.5 teaspoon of salt and 4 tablespoons of water
  2. Push out the dough in a pie shell
  3. Pre bake for 15 min
  4. Peel and tear carrots 3 carrots (I usually use the potato peeler instead of grater)
  5. Cut the onions into thin slices
  6. Roast the onions and carrots in a frying pan
  7. Mix the eggs, milk the cheese and 1 tablespoon of thyme, salt and pepper
  8. Add the carrots and the onions
  9. Pour the batter into the baked pie and bake for another 25 minutes

Sauce

  1. Mix 3 dl creme fraiche with 1 tablespoon of dried thyme, 1 chopped red onion and 2 teaspoons honey

Serving

  1. Serve the pie with the sauce and a delicious salad
