Ingredienser

  • 500 grams of broccoli
  • 1 clove of garlic
  • 1 can 390 grams artichokes bottoms
  • 1 vegetable bouillon cube
  • 3 dl cream
  • 1 liter water
  • 1 tablespoon olive oil
  • 4 more poached eggs
  • 4 tablespoons vinegar
  • 50 grams of cress
  • Salt and black pepper

  1. Boil broccoli in 1 liter of water for 10 minutes.
  2. Put the broccoli in a blender together with 3 dl of the water you boiled the broccoli in, add cream and mix.
  3. Pour the soup into a saucepan, add salt, pepper and a  vegetable bouillon cube, heat
  4. Slice the artichoke bottoms and fry them in olive oil for a few minutes together with a pressed clove of garlic, salt and pepper
  5. Crack the eggs and put them in each glass with 1 tablespoon vinegar each
  6. Boil water and salt, lower the heat and make a vortex in the water using a spoon.
  7. Pour the egg and vinegar into the vortex and simmer for 4 minutes.
  8. Pick up the egg using a spoon
  9. Serve the soup with artichoke the poached egg and decorate with cress
