A super tasty Cheesecake filled with lovely berries

Blueberries are filled with antioxidants – the body’s own “protective treatment” which inhibits oxidation in the cells. Antioxidants fight the harmful free radicals and are considered central to a long, healthy life

Blueberry and raspberry cheesecake

  • 14 pieces of digestives bisquits
  • 1/2 dl olive oil
  • 3 eggs
  • 1 dl sugar
  • 1 teaspoon of vanilla powder
  • 250 grams of frozen blueberry and raspberry mix


  1. Heat the oven to 200 degrees
  2. Crush the digestives biscuits and mix with the olive oil
  3. Place the mixture into a springform pan (20 cm) and press it down to become compact
  4. Pre-bake for 5 min
  5. Beat 3 eggs with 1 dl sugar and 1 teaspoon of vanilla powder( puffy)
  6. Pour the batter into the springform
  7.  Bake in the oven for 15 minutes (the cake should be a little loose in the middle when done)
  8. Pour the frozen berries onto the batter
  9. Let the cake cool before serving
