Ingredienser

  • 1 tbsp olive oil
  • 1 yellow onion
  • 2 garlic cloves
  • 350 gram cooked beetroots
  • 4 dl water
  • 3 tablespoons apple cider vinegar
  • 3 inch ginger, chopped
  • 3 dl coconut cream (or full fat coconut milk)
  • 1 tbsp lime
  • 1 teaspoon cumin seeds
  • Black pepper and salt
  • Chopped coriander
  • Pink peppercorns

GÖR SÅ HÄR

  1. Chop the yellow onion and garlic and fry in oil until the onion starts to get some color
  2. Add the cooked beets, water, apple cider vinegar, ginger, cumin, black pepper, salt and broth and cook for 5 min.
  3. Add the coconut milk and lime, then mix into a smooth soup, taste and add more salt and pepper if needed
  4. . Serve the soup with pink pepper (crush the pepper  lightly), chopped fresh coriander and pour some coconut milk over the soup (see picture)
